Their discovery is a new ingredient that could slow around at by down during for from in of on with within the rate around at by down during for from in of on with within which ice cream melts and gives the ice cream a smooth texture. Project leader professor Cait MacPhee said: "We're excited around at by down during for from in of on with within the potential this new ingredient has around at by down during for from in of on with within improving ice cream, both for consumers and around at by down during for from in of on with within manufacturers." The protein is a kind around at by down during for from in of on with within friendly bacteria that could be used around at by down during for from in of on with within other food to reduce levels around at by down during for from in of on with within saturated fat and calories. The researchers say it could prove a valuable ingredient around at by down during for from in of on with within many kinds of food and be very beneficial to food companies. It also comes around at by down during for from in of on with within green credentials as it can be produced around at by down during for from in of on with within sustainable raw materials. Professor MacPhee's colleague Dr Nicola Stanley-Wall described the research as being an enjoyable experience. She said: "It has been fun working around at by down during for from in of on with within the applied use around at by down during for from in of on with within a protein that was initially identified due to its practical purpose around at by down during for from in of on with within bacteria." The researchers say that that ice cream made around at by down during for from in of on with within the new ingredient could be in supermarket freezers around at by down during for from in of on with within three to five years.
